Culinary Arts practicums (known as 'internships' outside of British Columbia) can be done at a small to mid-sized restaurant, or hotel. Restaurants are mid-range to fine dining, and are staffed with a chef, sous chef, and at least one support staff member so students can see the full range of positions. Students primarily observe and assist only at a basic level - students can help at the prep-level but not with actual food preparation, plating or in service. Students may also have the opportunity to see the administrative aspect of culinary arts, including duties such as ordering and accounting. This practicum is best suited to students in culinary arts programs.
